Stir Fried Spicy BBQ Crab Claws with Spring onion, chilli & garlic
Serves 2 as a starter idea.
For a more substantial meal toss in some freshly cooked linguine!
8 bbq crab claws
1 red chilli, seeds removed, finely chopped
2 garlic cloves, finely chopped
2 inch root ginger peeled & roughly chopped
3 tsp of rice wine vinegar
2 tsp of caster sugar
1 tsp of Sea salt
6 tbsp. of vegetable oil
1 tbsp. of fish sauce
4 spring onions, finely sliced, 1 extra for garnish
Salt, pepper to taste
1 handful of chopped parsley leaves
- Blend the chilli, garlic and ginger in a food processor until a rough paste is formed. Add the rice wine vinegar, sugar and salt and blend until combined
- In a large wok, heat the vegetable oil over a medium heat. Add the chilli paste and stir for 1-2 minutes. Add the crab claws, fish sauce and spring onions
- Toss all the ingredients thoroughly, reduce the heat and place a lid on top. Cook for approximately 1 minutes making sure to shake the wok.
- To serve, season with salt and pepper to taste and top with a garnish of sliced spring onions and parsley & a squeeze of lime.
